Doufeu casseroles are specially designed for Doufeu cooking, developed by the Le Creuset brand. The unique feature of this technique comes from the fact that you can place cold water or ice cubes on top of the lid (which is hollow) to enhance the condensation effect inside the casserole, which will create numerous droplets under the lid. This process ensures more flavor and more tender meat after cooking.
